Pomegranate Pineapple Champagne Cocktail

I was experimenting with champagne and different juices the other day and confirmed that I really do love champagne. I found several great combos. And, the more I taste tested, the better they all were. You know how that goes, right?

So, since I might not have been the best judge the first time around, I shared this drink for taste testing today for Happy Noon Year with the kids.

I mean, the moms tested this out. The KIDS had sparkling grape juice.

I have to say, it was a success. When I first made them, I used Barefoot Moscato Spumante Champagne, which is already a bit sweet, so I knew that would be good. Today we used a Prosecco, which was a bit drier, and it also was quite tasty.

But, a little bit dangerous.

They’re really smooth, which means I could easily drink one, then another, then another, and then wonder what happened to the rest of the night! Plain champagne, on the other hand, has a bit of a bite to it that forces me to sip and be civilized.

But, who wants to be civilized all the time, right?

Happy NOON Year!

And Happy New Year! Looking forward to many more recipes and adventures in 2016. Wishing you a Goodlicious New Year.

Pomegranate Pineapple Mimosa

2 Tablespoons pineapple juice

Thanks very much! It was fun taking the photos because, well, I had to drink the drinks after the photos were done! Thanks for reading.
